The Chacon family does three natural processes, the Perla Negra, Alma Negra and Diamonda Negra. We loved their Perla Negra so much, we just had had to try their other offering. With the Alma Negra processing, the coffee starts out drying on the patio. It is then piled overnight and spread out in the sun during the next day day. This coffee is very sweet and exceptionally clean. In the cup, expect lots of complexity. Lots of grape and citrus acidity, with raisin, caramel and chocolate sweetness. This is not a subtle coffee and that's one of the reasons we love it so much. Hope you do too!
